Chickpea, Lentil & Sun-dried Tomato Salad

One of our signature dishes, its a secret we don't mind sharing with you! It's a great, quick and easy staple to make at the weekend or during the week.



Chickpea, lentil and sun-dried tomato salad


SERVES 2-3 PREPARATION & COOKING TIME - 15mins

Ingredients


  • 120g Watercress

  • 30g Baby spinach

  • 300g Tinned green lentils

  • 300g Tinned chickpeas

  • 150g Fresh garden peas (can you frozen)

  • 150g Endamami (can you frozen)

  • 150g Fine sliced shallots

  • 60g Sun-dried tomatoes


    SALAD DRESSING

  • 2 Spring onions, fineley sliced

  • Handful of chopped parsley

  • 2 tbsp Honey

  • 1 tbsp Balsamic vinegar

  • 5 tbsp Olive oil

  • 1 tsp Dijon mustard



Method


  1. Thinly slice shallots and sun-dried tomatoes.

  2. Drain lentils and chickpeas.

  3. Defrost and drain peas and endamami beans.

  4. Mix all the ingredients thoroughly and add dressing.
